Happy St. Patrick’s Day!

It’s time to get your Irish on in the kitchen as generations around the world celebrate this special occasion with their family and friends! We hope you enjoyed our green themed recipes the other day. But, here are some traditional dishes that are sure to bring smiling faces around your dinner table!

Irish Cabbage Rolls

Total/Prep Time: 1 hour 50 minutes

Ingredients
10 cabbage leaves, blanched
1 lb corned beef, roughly chopped
1 medium onion, quartered
1 stalk celery, cut into 1-inch pieces
1 egg, beaten slightly
1 cup cooked brown rice
2 teaspoons spicy brown mustard
1 beef bouillon cube
¼ cup boiling water
1 (12 ounce) can beer
1 tablespoon butter
1 tablespoon flour

Directions

Preheat oven to 350°F. Place corned beef in a food processor and chop finely, remove. Add onion and celery and finely chop. In a bowl, combine egg, rice and mustard. Mix in corned beef, onion, and celery. Place 1/2 cup on each cabbage leaf and roll up tucking in ends and place seam side down in a 13×9 inch-baking pan. Dissolve bouillon in boiling water, add beer and pour over cabbage rolls. Cover tightly and bake 1 1/2 hours. Remove from oven and pour out 1 cup of liquid. Melt butter in a saucepan, add flour, stir and cook over low heat 1 minute. Add liquid, increase heat to medium high, bring to a boil, reduce heat and simmer until thickened. Pour over cabbage rolls and serve with additional mustard.

Creamy Irish Potato Soup

Serves: 5
Total/Prep Time: 45 minutes

Ingredients
2 tablespoons butter or margarine
4 green onions, sliced
1 stalk celery, sliced
1 3/4 cups Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
1/8 teaspoon ground black pepper
3 medium potatoes, peeled and sliced 1/4 inch thick
1 1/2 cups milk

Directions

Heat butter in saucepan. Add onions and celery and cook until tender.

Add broth, black pepper and potatoes. Heat to a boil. Cover and cook over low heat 15 minutes or until potatoes are tender. Place half the broth mixture and half the milk in blender or food processor. Cover and blend until smooth. Repeat with remaining broth mixture and remaining milk. Return to saucepan. Heat through.
