Workin’ the Grill

1) Grilled Buttermilk Chicken

The key to grilling the chicken is to create two heat zones: a direct grilling zone, where the food is placed directly over the fire and an indirect zone, where the food is placed next to (not directly over) the fire.

Ingredients:

  • 4 cups of buttermilk
  • 15 garlic cloves
  • 1 cup of fresh rosemary or thyme
  • Coarse salt and freshly ground pepper
  • 3 whole chickens (approx. 3 lbs each), cut into 6 pieces
  • Safflower oil for brushing

Directions:

  1. Combine the buttermilk, garlic, herbs and 2 tablespoons of salt and 2 tablespoons of pepper.
  2. Divide the chicken into 2 baking dishes. Cover the chicken with the marinade and refrigerate for at least 4 hours or overnight. Remove the chicken from the refrigerator 30 minutes before grilling.
  3. Heat the grill to medium with both direct and indirect heat areas. Brush the grates with oil. Remove the chicken from the marinade and pat dry with paper towels. Grill the chicken, skin side down over the direct heat for 10 minutes. Flip, move to indirect heat and cover until the thermometer inserted into the thickest part and piece of chicken reads 165 degrees (about 10 to 15 minutes.)

2) Watermelon and Blue Cheese Salad

Ingredients:

  • 6 cups of seedless watermelon in bite size chunks
  • 2 tablespoons of champagne vinegar
  • 2 tablespoons of extra virgin olive oil
  • ½ teaspoon of kosher sea salt
  • ½ of fresh ground pepper
  • 4 ounces of blue cheese (1 cup crumbled)

Directions:

  1. In a large bowl, whisk the vinegar, oil, salt and pepper.
  2. Add the watermelon and blue cheese and toss gently to coat.

3) Red, White and Blue Shortcake

Ingredients:

  • 3 cups of raspberries
  • 3 cups of blueberries
  • 6 tablespoons of sugar
  • 6 tablespoons of orange juice
  • 12 biscuits
  • 3 pints of vanilla ice cream

Directions:

  1. In a large blow, toss the raspberries and blueberries with the sugar and orange juce. Let is sit of 5 minutes.
  2. To serve, split the biscuits and top with the ice cream and the berry medley.

Patriotic Fizzy Goodness

What’s more refreshing in the summertime than a cold, bubbly spritzer? And what is more patriotic than sipping a little red, white, and blue while celebrating the Independence of the United States? Whether you decide on cocktails or mocktails, this drink is sure to be a crowd pleaser.

Ingredients

  • 4 cups of cranberry juice
  • 4 cups of pineapple juice
  • Up to 1 ½ liters of vodka
  • 2 liters of ginger ale
  • Blueberries to garnish

(For a family friendly-drink, leave out the vodka and add more ginger ale.)

Directions:

  1. Combine all of the ingredients, except the ginger ale.
  2. Chill until serving time.
  3. Pour into a punch bowl, add the ginger ale at the last minute and garnish with blueberries.
